Ras el Hanout: Morocco's Top Shelf

Ras el Hanout: Morocco's Top Shelf

By Noah Carter ·

The Name Says It All

Ras el hanout translates to 'head of the shop,' meaning the finest blend a spice merchant can create. There is no single recipe — each shopkeeper crafts their own version using 20 to 40 or more ingredients.

Core Spices

Exotic Additions

Traditional versions include rosebuds, lavender, grains of paradise, long pepper, and sometimes Spanish fly (cantharides, now banned). Modern recipes typically use 15-20 ingredients.

How to Make It

Toast whole spices, cool, grind, and combine with pre-ground spices. Sift through a fine strainer for an even powder. Store in an airtight container for up to 6 months.

Classic Uses

Essential in tagines, couscous dishes, and mrouzia (lamb with honey). Use as a rub for chicken or lamb before slow cooking. A teaspoon transforms simple rice into something extraordinary.
