Japanese Shichimi Togarashi Guide
The Seven Flavors
Shichimi togarashi literally means "seven-flavor chili." The classic Kyoto blend includes: red chili pepper, sansho (Japanese pepper), orange peel, black and white sesame seeds, hemp seed, and nori seaweed.
History
Shichimi originated in the Edo period (1600s) when spice merchants near Kyoto temples began blending imported and local ingredients. The Sasakiya shop in Kyoto still makes shichimi using methods from 1655.
Regional Variations
- Kyoto style: More sansho, elegant and numbing
- Tokyo style: Heavier on chili, straightforward heat
- Hiroshima: Adds yuzu peel for citrus notes
- Okinawa: Uses local shima togarashi chilies
How to Use
Shichimi is a finishing spice, never cooked. Sprinkle over ramen, udon, soba, yakitori, tempura, or even popcorn.
