Ethiopian Berbere: A Sacred Spice Blend
What Is Berbere?
Berbere is a complex Ethiopian spice blend containing chili peppers, garlic, ginger, basil, korarima, rue, ajwain, radhuni, nigella, and fenugreek. Each family guards their own recipe.
Cultural Significance
In Ethiopian culture, a woman's skill in making berbere reflects her standing. The preparation is a multi-day ritual: sun-drying chilies, toasting spices, hand-grinding with a mortar. The blend defines Ethiopian cuisine.
Traditional Preparation
- Sun-dry red chilies for days
- Toast whole spices individually until fragrant
- Grind everything together (traditionally by hand)
- Sun-dry the mixed powder for another day
Key Dishes Using Berbere
Doro wat (chicken stew), kitfo (minced beef), misir wat (red lentil stew), and tibs (sauteed meat). Berbere is never used raw — it must be cooked in oil or niter kibbeh (spiced butter).
