What Is Berbere?
Berbere is the backbone of Ethiopian cuisine—a complex, fiery spice blend that flavors stews (wats), lentil dishes, and injera bread. Every Ethiopian household has its own recipe, passed down through generations.
Core Ingredients
- Dried red chilies (bird's eye or New Mexico) — deep heat
- Fenugreek — slightly bitter, maple-like
- Coriander seed — citrusy warmth
- Cardamom — floral sweetness
- Cloves and allspice — aromatic depth
- Ginger and garlic — pungent backbone
- Rue (tena adam) — traditional Ethiopian herb
Cooking with Berbere
Berbere is typically bloomed in niter kibbeh (Ethiopian spiced butter) at the start of cooking. This releases its fat-soluble flavors and creates the rich base for doro wat (chicken stew) and misir wat (red lentils).
Making Your Own
Toast whole spices in a dry skillet until fragrant, cool completely, then grind to a fine powder. Start with 10 dried chilies (stems removed), 1 tsp each fenugreek and coriander, 4 cardamom pods, 4 cloves, and 1/2 tsp ginger. Adjust heat to taste.
