Vanilla Bean Grades: What to Buy
Understanding Vanilla Grades
Vanilla beans are graded by moisture content, appearance, and length. The two main grades serve different purposes in the kitchen.
Grade A (Gourmet/Prime)
- Moist, oily, pliable beans
- 6-8 inches long, uniform color
- Best for: scraping seeds into batters, crème brûlée, ice cream
- More expensive per bean
Grade B (Extraction Grade)
- Drier, thinner, may have blemishes
- Less visually appealing but equally flavorful
- Best for: making vanilla extract, infusing milk/cream, sugar
- Better value for extract making
Which Should You Buy?
If you split beans for visible seeds, Grade A is worth it. For extract and syrups, Grade B gives identical flavor at lower cost.
Origin Matters Too
Madagascar Bourbon vanilla is the classic choice. Tahitian vanilla is fruitier and floral. Mexican vanilla has spicy undertones.
