Fresh vs Dried Turmeric: When to Use Each

By Chef Liu Wei ·

Fresh Turmeric

Fresh turmeric root has a brighter, more complex flavor with peppery and gingery notes. Its color is vivid orange-yellow. Use it in juices, smoothies, pickles, and fresh curry pastes.

Dried Turmeric (Ground)

Ground turmeric is earthier, slightly bitter, and more concentrated. It is the standard form in most spice racks and curry powders. Use it in marinades, soups, rice dishes, and golden milk.

Substitution Guide

Use 1 inch of fresh root for every 1 teaspoon of ground turmeric. Fresh turmeric stains less than ground, but both will stain surfaces and clothing.

Absorption Tip

Pair turmeric with black pepper and fat (coconut oil, ghee) to boost curcumin absorption by up to 2000%. This applies to both fresh and dried forms.

Storage

Fresh root lasts 2-3 weeks in the fridge or 6 months frozen. Ground turmeric keeps 6-12 months in a sealed jar.
