Cinnamon Bark vs Ground Cinnamon: Which Is Better?
Cinnamon sticks (bark): best for simmering in liquids, infusing oils, teas, mulled wine. Ceylon cinnamon prized for delicate flavor. Shelf life up to 4 years. Ground cinnamon: best for baking, quick mixing, spice rubs. Cassia cinnamon is stronger and affordable. Shelf life 6 months to 2 years. Conversion: 1 cinnamon stick (3-inch) equals approximately 1/2 to 1 teaspoon ground. Ceylon cinnamon has lower coumarin than Cassia, safer for daily use. Cinnamon sticks are extremely hard and not meant to be eaten directly.
