Black Pepper: Tellicherry vs Malabar Grades
Not All Black Pepper Is Equal
Black pepper is the world's most traded spice, but quality varies enormously between grades.
Tellicherry (TGSEB)
Tellicherry peppercorns are the largest grade (4.75mm+), harvested when fully ripe. They have complex flavor: fruity, floral, with citrus and pine notes.
Malabar (MG1)
Malabar peppercorns are smaller (4.0-4.25mm) and more uniformly hot. They deliver straightforward pepper heat without complex aromatic layers.
When to Use Each
- Tellicherry: finishing, cacio e pepe, steak au poivre, salads
- Malabar: general cooking, marinades, stocks, spice blends
Storage and Grinding
Buy whole peppercorns and grind fresh. Pre-ground pepper loses aroma within days. A quality burr grinder produces uniform particle size.
