Thai Curry Paste: Spice Blend Guide
The Foundation of Thai Curry Pastes
Thai curry pastes combine dried spices with fresh aromatics for complex flavor layers. They share a common foundation of lemongrass, galangal, and shrimp paste.
Green Curry Paste
- 10 green Thai chilies
- 3 stalks lemongrass
- 2 inches galangal
- 5 shallots, 6 garlic cloves
- 1 tbsp shrimp paste
- 1 tsp ground coriander and cumin
- Thai basil and cilantro roots
Red Curry Paste
Replace green chilies with 15 soaked dried red chilies. Add white peppercorns. Deeper, more concentrated heat with fruity undertones.
Massaman Curry Paste
Add cinnamon, cardamom, cloves, and nutmeg to a red curry base. Reflects Persian and Indian influence on southern Thai cuisine.
Pounding vs Blending
Traditional stone mortar produces the best texture, releasing essential oils through crushing rather than cutting.
