Star Anise: 6 Uses Beyond Pho
More Than a Soup Garnish
Star anise is one of the most visually striking spices, and its complex licorice-anise flavor has applications far beyond Vietnamese pho. Here are six creative ways to use it.
1. Mulled Beverages
Add 2-3 stars to mulled wine, cider, or hot toddies. The warm anise flavor pairs beautifully with cinnamon sticks, cloves, and orange peel. Simmer gently for 20 minutes to extract full flavor.
2. Red Braised Meats
Chinese hong shao (red braising) relies on star anise as the dominant spice. Pork belly, beef shank, and chicken legs all benefit from the sweet, aromatic depth it provides during long braising.
3. Poached Pears
Poach firm pears in a syrup of water, sugar, star anise, and vanilla. The result is an elegant dessert with aromatic, jewel-toned fruit. Serve with mascarpone or vanilla ice cream.
4. Spice Rubs for Duck
Grind star anise with Sichuan pepper, cinnamon, and cloves for a duck rub. The anise cuts through the richness of duck fat beautifully. Score the skin, rub generously, and roast.
5. Chai Spice Blend
Star anise adds complexity to homemade chai. Combine with cardamom, cinnamon, cloves, ginger, and black pepper. Simmer with black tea and milk for a warming drink.
6. Infused Simple Syrup
Steep 3-4 stars in equal parts sugar and water for a versatile cocktail syrup. Use in old fashioneds, gin cocktails, or drizzle over pound cake.
