Vanilla Extract: Pure vs Imitation (2026)
What Pure Vanilla Extract Is
FDA standards require pure vanilla extract to contain at least 35% alcohol and 13.35 ounces of vanilla beans per gallon. The extraction process takes months, developing over 200 flavor compounds that synthetic versions cannot replicate.
Imitation Vanilla
Made from synthetic vanillin derived from wood pulp or petrochemicals. It provides the primary vanilla note but lacks the complex secondary flavors: caramel, cherry, prune, and woody undertones found in pure extract.
Baking Test Results
In blind taste tests of vanilla cake and cookies, pure extract won by a narrow margin. The difference is most noticeable in uncooked applications like frosting, custard, and ice cream where heat hasn't evaporated the volatile compounds.
When to Splurge
- Custards and creme anglaise: use pure
- Buttercream frosting: use pure
- High-temperature baking: imitation works fine
- Vanilla-forward recipes: always use pure
