Long Pepper vs Black Pepper: What Changed
The Forgotten Pepper
Long pepper (Piper longum) was the dominant pepper in ancient Rome and medieval Europe before black pepper took over. Today it is making a comeback in artisan kitchens.
Physical Differences
Long pepper grows in cylindrical spikes about 1-2 inches long, while black pepper comes as individual round berries. Both are from the Piper genus.
- Long pepper: Cylindrical spike, 1-2 inches
- Black pepper: Round berry, about 5mm diameter
- Long pepper is slightly hotter
- Both contain piperine but in different ratios
Flavor Comparison
Long pepper is hotter than black pepper but more complex. It has notes of cinnamon, nutmeg, and ginger alongside the familiar pepper heat.
Using Long Pepper
Break off pieces and grind as needed, or use whole in pickling brines and slow-cooked stews. It works well in any dish that calls for black pepper but benefits from extra complexity.
Sweet Applications
Unlike black pepper, long pepper works beautifully in desserts. Try it in chocolate truffles, spiced fruit compotes, or over vanilla ice cream.
Where to Buy
Look for Indonesian long pepper or Indian pippali at specialty spice shops. Whole spikes keep for 2 years; grind just before use for best flavor.
