Cardamom Pods: Green vs Black Explained
Two Distinct Spices
Green cardamom (Elettaria cardamomum) and black cardamom (Amomum subulatum) look similar but taste completely different. They're not interchangeable in recipes.
Green Cardamom
Sweet, floral, and citrusy with eucalyptus notes. Used in both sweet and savory dishes. Essential in chai, Scandinavian baking, and Indian biryani. Seeds inside the pod carry the most flavor.
Black Cardamom
Smoky, camphor-like, and earthy. The pods are dried over open flames, giving them their signature smokiness. Used exclusively in savory dishes — whole in dals, rice, and meat curries. Never used in desserts.
How to Use
- Crack pods: Gently crush to expose seeds before adding to dishes
- Grind seeds: Remove seeds from pods and grind fresh for baking
- Whole pods: Add to rice or stews, remove before serving
Storage Tips
Keep pods whole until ready to use. Green cardamom pods should be vibrant green — faded pods have lost their oils. Store airtight for up to one year.
