Green vs Black Cardamom: Uses Explained

Green vs Black Cardamom: Uses Explained

By Ryan Tanaka ·

Two Different Plants

Green cardamom (Elettaria cardamomum) and black cardamom (Amomum subulatum) are related but distinct spices with completely different flavor profiles and uses.

Green Cardamom

Sweet, floral, and citrusy with eucalyptus notes. Used in both sweet and savory dishes. Essential in chai, biryani, Scandinavian baking, and Arabic coffee. The seeds inside the pod carry the most flavor. Crack pods before using.

Black Cardamom

Smoky, earthy, and camphor-like. Dried over open fire, which gives it the distinctive smoky character. Used exclusively in savory dishes: biryani, garam masala, braised meats, and Sichuan cuisine. Never used in desserts. Always used whole and removed before serving.

Storage Tips

Keep pods intact until use. Store in airtight containers away from light. Green cardamom pods should feel plump and slightly oily. If they rattle when shaken, the seeds inside have dried out. Black cardamom has a longer shelf life due to its smoky drying process.
