Homemade Chai Spice Blend: Better Than Boxed
Chai From Scratch
Masala chai is India's beloved spiced tea. Making your own spice blend produces a far more aromatic and flavorful cup than any pre-made mix.
The Spice Blend
- 4 tbsp green cardamom pods (cracked)
- 2 tbsp whole cloves
- 2 tbsp black peppercorns
- 1 tbsp fennel seeds
- 2 cinnamon sticks (broken into pieces)
- 1 tbsp ground ginger (or 2 inches fresh, sliced)
- 1 star anise (optional)
Brewing Method
- Crush whole spices lightly in a mortar
- Simmer 1 cup water with 2 tsp spice mix for 3 minutes
- Add 2 tsp loose black tea (Assam works best)
- Simmer 2 more minutes
- Add 1 cup milk and sweetener to taste
- Bring to a boil, then reduce and simmer 1 minute
- Strain and serve hot
Adjusting Strength
For stronger chai, increase spices and simmer longer. For lighter chai, reduce the spice amount. Everyone's perfect chai is different — experiment!
Make-Ahead Tip
Mix a large batch of the dry spice blend and store in a jar. Use 2 tsp per 2-cup serving whenever you want chai.
