Understanding the Pepper Scoville Scale
The Scoville Scale Explained
The Scoville Organoleptic Test, created in 1912, measures the capsaicin concentration in peppers. Today, high-performance liquid chromatography (HPLC) provides precise Scoville Heat Unit (SHU) ratings.
Heat Ranges
- 0 SHU: Bell peppers
- 2,500-8,000 SHU: Jalapeños
- 10,000-25,000 SHU: Serrano peppers
- 30,000-50,000 SHU: Cayenne
- 100,000-350,000 SHU: Habanero
- 1,000,000+ SHU: Ghost pepper, Carolina Reaper
Cooking Applications by Heat Level
Mild peppers (under 5,000 SHU) are great for fresh salsas and salads. Medium peppers (5,000-50,000) work in cooked sauces and stir-fries. Hot peppers (50,000+) should be used sparingly as flavor accents.
Handling Hot Peppers Safely
Always wear gloves when handling peppers above 50,000 SHU. Capsaicin oil can cause severe irritation to eyes and skin. Wash cutting boards thoroughly after use.
