The Story Behind Shichimi Togarashi
Shichimi togarashi, meaning "seven-flavor chili pepper," has been a staple of Japanese cuisine since the Edo period (1603-1868). Originally sold by herbalists in Tokyo and Kyoto, this blend combines heat, umami, and citrus in one versatile seasoning.
Traditional Ingredients
- Togarashi (red chili pepper) — the base heat
- Sansho pepper — citrusy, tingling sensation
- Roasted orange peel — bright aroma
- Black and white sesame seeds — nutty richness
- Hemp seed or poppy seeds — subtle crunch
- Nori (seaweed) — umami depth
- Ginger — warm, spicy finish
How to Use It
Shichimi is the classic topping for udon and soba noodles, but it also shines on yakitori, tempura, rice bowls, and even avocado toast. Add at the table rather than during cooking to preserve its complex flavors.
DIY Blend
Combine 2 tbsp togarashi flakes, 1 tsp each sansho, orange peel, black sesame, white sesame, nori flakes, and ground ginger. Toast sesame seeds first for deeper flavor.
