Japanese Furikake: Rice Seasoning Guide
What Is Furikake?
Furikake (ふりかけ) means "to sprinkle over." It's a dry Japanese seasoning meant to be sprinkled over rice, but it's versatile enough for noodles, eggs, popcorn, and more.
Basic Recipe
Mix: 2 tbsp nori (seaweed, torn into small pieces), 2 tbsp toasted sesame seeds, 1 tbsp bonito flakes (katsuobushi), 1 tsp salt, 1 tsp sugar. Optional: add shiso leaves, dried fish, or yukari (shiso powder).
Popular Varieties
- Nori: Seaweed-forward, most common
- Shiso (Yukari): Purple, tangy, made from red shiso leaves
- Okaka: Bonito-heavy, rich umami
- Wasabi: Spicy with real wasabi or horseradish
- Egg: Sweet-savory with dried scrambled egg bits
Creative Uses
- Sprinkle on onigiri (rice balls) or bento boxes
- Top soft-boiled eggs or tofu
- Mix into popcorn for a savory snack
- Add to pasta for a Japanese-Italian fusion dish
- Crust for salmon or tuna before searing
