Indian Chaat Masala: Street Food Secret
The Soul of Street Food
Chaat masala is the finishing spice blend that gives Indian street food its signature tangy, savory, slightly funky flavor. The key ingredient is amchur (dried mango powder), which provides a fruity sourness.
Key Ingredients
- Amchur: Dried mango powder (primary souring agent)
- Black salt (kala namak): Sulfurous, eggy aroma — the "funky" note
- Cumin: Earthy, warm base
- Black pepper: Heat
- Ginger powder: Warmth and zing
- Asafoetida (hing): Pungent depth (used sparingly)
- Chili powder: Heat level varies by vendor
How It's Used
Chaat masala is a finishing spice, never cooked. Sprinkled over papdi chaat, aloo tikki, fruit chaat, dahi puri, and even plain cucumber slices. Also excellent on popcorn, roasted chickpeas, and fresh fruit.
DIY Recipe
Mix: 3 tbsp amchur, 1 tbsp black salt, 2 tsp cumin (toasted, ground), 1 tsp black pepper, 1 tsp ginger powder, 1/2 tsp asafoetida, 1 tsp chili powder. Store airtight for 3 months.
