Not One Recipe Fits All

Garam masala means warm spice blend, but the mix changes region to region and household to household.

North Indian (Delhi/Punjab)

Heavy on cardamom, cloves, and cinnamon. Often includes black pepper and nutmeg. Used in Mughlai dishes like butter chicken.

Bengali

Simpler: cinnamon, cardamom, cloves, bay leaf. Reflects Bengali preference for subtlety.

South Indian

Often includes star anise, mace, and stone flower. Warmer and more aromatic.

Kashmiri

Features saffron, fennel, and dried ginger. Designed for slow-cooked wazwan dishes.

Making Your Own

Start with cinnamon, cardamom, cloves, cumin, coriander and adjust based on cuisine. Toast whole spices, cool, then grind.
