Ethiopian Berbere Spice Tradition
What Is Berbere?
Berbere is a complex Ethiopian spice blend containing up to 20 ingredients. It is the backbone of Ethiopian cuisine, used in wots (stews), tibs (sauteed meats), and the national dish, doro wot (chicken stew).
Core Ingredients
- Dried red chilies (the base, usually birdseye or similar)
- Fenugreek, coriander, cumin, cardamom
- Cloves, allspice, cinnamon, nutmeg
- Black pepper, ginger, turmeric
- Rue (besobila) — unique to Ethiopian berbere
Making Berbere at Home
Sun-dry or oven-dry the chilies. Toast all whole spices separately (they have different burning points). Grind everything to a fine powder. Traditional preparation takes 2-3 days, including drying time.
Cultural Significance
Every Ethiopian household has its own berbere recipe, often passed down through generations. The blend is prepared in large batches, typically once or twice a year, and stored carefully. It represents family identity and culinary heritage.
Using Berbere
Bloom in niter kibbeh (Ethiopian spiced butter) at the start of cooking. Use 2-3 tablespoons per pound of meat. The flavor deepens with slow cooking — berbere dishes always taste better the next day.
