Ethiopian Berbere: History and Recipe
Ancient Roots
Berbere has been central to Ethiopian cooking for over 1,500 years. The blend reflects Ethiopia's position on ancient spice routes connecting Africa, Arabia, and India. Each family guards their own recipe variation passed down through generations.
Core Ingredients
- Dried red chilies (Ethiopian mitmita preferred)
- Coriander seeds
- Fenugreek
- Cardamom
- Cloves
- Allspice
- Cinnamon
- Black pepper
- Ginger
- Turmeric
Preparation
Toast each spice separately until fragrant. Cool completely, then grind together to a fine powder. The process takes about 30 minutes and fills your kitchen with an incredible aroma.
Traditional Uses
Berbere is the primary seasoning in doro wat (chicken stew), misir wat (lentil stew), and kitfo (Ethiopian steak tartare). It is always cooked in niter kibbeh (spiced clarified butter) to bloom the flavors before adding other ingredients.
Modern Applications
Use berbere as a rub for grilled meats, stir into yogurt for a dipping sauce, or sprinkle over roasted sweet potatoes. Its complex heat pairs beautifully with rich, fatty proteins.
