Mastering Tadka: Indian Tempering

Mastering Tadka: Indian Tempering

By Priya Sharma ·

What Is Tadka

Tadka means blooming spices in hot oil or ghee. The hot fat extracts fat-soluble flavor compounds and distributes them through the dish.

The Science

Most spice flavor compounds are fat-soluble. Hot oil at 350-375°F efficiently pulls these compounds out in seconds.

Correct Spice Order

  1. Mustard seeds first, wait for popping
  2. Cumin seeds after mustard pops, 15-20 seconds
  3. Whole dried chiles with cumin
  4. Asafoetida, a pinch, briefly
  5. Curry leaves last

Common Mistakes

Adding all spices at once, oil not hot enough, and adding ground spices (they burn).

North vs South Tadka

North: ghee, cumin, garlic, red chile for dals. South: coconut oil, mustard seeds, curry leaves for sambar.
