Pickling Spices: DIY Blend
Classic Pickling Spice Blend
A good pickling spice mix balances warmth, pungency, and subtle sweetness. Here is a versatile base that works for everything from dill pickles to pickled beets.
Ingredients
- 2 tbsp mustard seeds
- 1 tbsp coriander seeds
- 1 tbsp whole allspice berries
- 2 tsp black peppercorns
- 1 tsp whole cloves
- 4 bay leaves, crumbled
- 1 tsp dill seeds
- 2 small dried red chilies
- 1 cinnamon stick, broken
- 1 tsp red pepper flakes
Method
Lightly crush the larger spices (allspice, cinnamon) in a mortar. Mix everything together. Use 2-3 tablespoons per quart of brine. Tie in cheesecloth for easy removal.
Customizations
For bread-and-butter pickles: add 1 tbsp celery seeds and extra mustard. For spicy pickles: double the chilies and add Sichuan pepper. For sweet pickles: add a star anise and extra cinnamon.
Beyond Pickles
This blend also works for corned beef brine, mulled cider, or poaching liquid for fish. Toast lightly before adding to hot liquids for maximum flavor extraction.
