Infusing Oils and Vinegars with Spices at Home
Why Infuse at Home
Homemade spice-infused oils and vinegars cost a fraction of specialty store versions and taste significantly fresher. You control the intensity and ingredient quality.
Safety First
Garlic and fresh herb infusions in oil carry botulism risk. For safety, use only dried spices and herbs for oil infusions. Refrigerate and use within 2 weeks, or use the hot infusion method.
Hot Infusion Method (Safer)
Heat oil to 180°F, add spices, steep for 5 minutes off heat, then strain. The heat kills bacteria and speeds extraction. Cool completely before bottling.
Oil Infusion Recipes
- Rosemary oil: 3 sprigs dried rosemary per cup of olive oil
- Chili oil: 2 tbsp dried chili flakes per cup of neutral oil
- Cumin oil: 1 tbsp toasted cumin seeds per cup of oil
- Garlic oil: Use dried garlic chips, never fresh garlic
Vinegar Infusions
Vinegar's acidity makes it naturally safe for infusions. Combine spices with vinegar in a clean jar, seal, and let steep for 1-2 weeks, shaking daily.
Vinegar Infusion Recipes
- Tarragon vinegar: Fresh tarragon sprigs in white wine vinegar
- Spiced apple cider vinegar: Cinnamon, cloves, allspice
- Chili vinegar: Dried chilies in rice vinegar
Storage
Store infused oils in the refrigerator for up to 2 weeks. Vinegar infusions last 6 months at room temperature. Always use clean, sterilized bottles.
