Herbes de Provence: Uses and Substitutes
What Is It?
Herbes de Provence is a dried herb blend from southeastern France. Traditional blends include thyme, rosemary, savory, marjoram, and oregano. Lavender is a common modern addition (though not traditional).
Classic Uses
- Roasted Chicken: Rub under the skin before roasting
- Grilled Fish: Sprinkle on sea bass or salmon before grilling
- Ratatouille: Essential in this Provençal vegetable stew
- Olive Oil Marinade: Steep in olive oil for bread dipping
- Roasted Vegetables: Toss with tomatoes, zucchini, and eggplant
Substitutes
Italian seasoning is the closest substitute (same herbs, slightly different ratios). Or mix equal parts dried thyme, rosemary, and oregano with a pinch of savory if available.
DIY Blend
Mix: 2 tsp thyme, 2 tsp marjoram, 1 tsp rosemary (crushed), 1 tsp savory, 1 tsp oregano. Optional: 1/2 tsp lavender buds. Store airtight for up to 6 months.
