Ginger Stir-Fry: Techniques That Work

Fresh Ginger vs Ground Ginger

For stir-frying, always use fresh ginger. Ground ginger has a different flavor profile — sweeter and more concentrated — and doesn't perform well at high heat. Fresh ginger releases aromatic oils when hit with hot oil.

How to Prepare Ginger for Stir-Fry

Peel the ginger root with a spoon. Cut it into thin matchsticks (julienne) for texture, or mince it finely for a more distributed flavor. For maximum aroma, smash the ginger with the flat of your knife before cutting.

The Hot Oil Technique

Heat your wok until it's smoking hot. Add oil, then immediately add the ginger. It should sizzle and become fragrant within 10-15 seconds. This is your signal to add other aromatics like garlic and scallions.

Timing Is Everything

Add ginger early in the cooking process but not first. The typical order is: oil → dried chilies → ginger → garlic → protein → vegetables → sauce. This layering builds complex flavor.
