Five Spice Pork Belly: Easy Recipe
What Is Chinese Five Spice?
Chinese five spice powder blends star anise, cloves, cinnamon, Sichuan peppercorns, and fennel seeds. It creates a complex, warming flavor that is the backbone of many Cantonese roast meat recipes.
Choosing the Right Pork Belly
Look for a piece with even layers of meat and fat, with the skin intact. A piece about 2 inches thick and 1 pound works well for this recipe. Ask your butcher to score the skin if it hasn't been done.
The Marinade
Mix 2 tsp five spice powder, 1 tbsp soy sauce, 1 tbsp Shaoxing wine, 1 tsp sugar, 1/2 tsp salt, and 2 cloves minced garlic. Rub this mixture on the meat side only — keep the skin dry for maximum crispiness.
Roasting Method
Pat the skin very dry with paper towels. Brush with white vinegar and sprinkle with coarse salt. Roast at 350°F (175°C) for 1 hour, then increase to 450°F (230°C) for 20 minutes to puff and crisp the skin.
Serving
Let rest for 10 minutes before slicing. Serve with steamed rice, stir-fried greens, and a dipping sauce of soy sauce mixed with rice vinegar and chili oil. The contrast of crispy skin and tender meat is extraordinary.
