Cumin Lamb Stew: Bold Flavor in One Pot
Why Cumin and Lamb Work Together
Cumin's earthy warmth cuts through lamb's richness, creating a balanced depth that few spice-meat pairings can match. This stew builds layers of flavor through slow simmering.
Ingredients
- 2 lbs lamb shoulder, cubed
- 2 tbsp ground cumin
- 1 tsp smoked paprika
- 4 cloves garlic, minced
- 1 large onion, diced
- 2 carrots, chopped
- 400g crushed tomatoes
- 2 cups beef broth
- Salt and black pepper
Method
Season lamb with cumin, paprika, salt, and pepper. Sear in a Dutch oven until browned on all sides. Remove and set aside.
Sauté onion and garlic until soft, about 3 minutes. Add carrots and cook 2 more minutes. Return lamb to pot, add tomatoes and broth.
Cover and simmer on low heat for 90 minutes until lamb is fork-tender. Adjust seasoning and serve with crusty bread or rice.
Tips for Best Results
- Toast cumin in a dry pan before grinding for deeper flavor
- Don't rush the sear — browning builds the flavor base
- Leftovers taste even better the next day
