What Makes Jerk "Jerk"?

Jerk seasoning is a Jamaican creation combining indigenous Taino cooking methods with African and Asian spice influences. The three essential elements: allspice (pimento), Scotch bonnet peppers, and thyme.

Dry Rub Version

Mix: 2 tbsp allspice, 1 tbsp black pepper, 1 tbsp dried thyme, 2 tsp garlic powder, 2 tsp onion powder, 1 tsp each cinnamon, nutmeg, cayenne. Add 1 tsp brown sugar and 1 tsp salt.

Wet Marinade Version

Blend: 4 scallions, 3 garlic cloves, 1-2 Scotch bonnet peppers (seeded for less heat), 2 tbsp allspice, 1 tbsp fresh thyme, 2 tbsp soy sauce, 1 tbsp lime juice, 1 tbsp brown sugar. Marinate chicken or pork for 4-24 hours.

Cooking Method

Traditional jerk is smoked over pimento wood. At home, grill over indirect heat with pimento wood chips soaked in water. Or bake at 400°F on a wire rack over a sheet pan.

Heat Level

Scotch bonnets are 100,000-350,000 SHU — very hot. For milder jerk, substitute habanero (similar flavor, easier to find) or even jalapeño.
