Saffron Risotto: Italian Method Guide
The Story of Risotto alla Milanese
This iconic Milanese dish dates back to the 16th century. Legend says a glassmaker added saffron to a wedding feast risotto as a prank, but the golden result was so delicious it became a classic.
Key Ingredients
- 1.5 cups arborio or carnaroli rice
- 1/2 tsp saffron threads
- 6 cups warm chicken or vegetable stock
- 1/2 cup dry white wine
- 1 small onion, finely diced
- 4 tbsp butter
- 1/2 cup grated Parmigiano-Reggiano
Preparing the Saffron
Toast saffron threads in a small dry pan for 30 seconds, then crumble them into 1/4 cup warm stock. Let steep for at least 10 minutes. This step maximizes color and flavor extraction.
The Risotto Technique
Sauté onion in butter until soft. Add rice and toast for 2 minutes. Deglaze with wine. Add warm stock one ladle at a time, stirring constantly. Wait until each addition is absorbed before adding more. Add the saffron stock halfway through cooking.
Finishing the Risotto
After 18-20 minutes, the rice should be al dente and creamy. Remove from heat, stir in remaining butter and Parmesan. This final step (mantecatura) creates the signature creamy texture. Serve immediately in warm bowls.
