Why Freshness Matters

Test 1: The Smell Test
Open the jar and inhale. Fresh spices have a strong, immediate aroma. If you need to sniff hard to detect anything, the spice is past its prime.
Benchmarks
- Cinnamon: warm, sweet, woody — should fill the room
- Cumin: earthy, slightly bitter — pungent even through the lid
- Paprika: sweet, peppery — faint smell means faded color too
Test 2: The Color Check
Compare to a new jar. Turmeric should be vivid yellow-orange. Chili powder should be deep red, not brown. Paprika should be bright, not dusty.
Test 3: The Taste Test
Put a pinch on your tongue. Fresh black pepper should burn slightly. Fresh cinnamon should taste warm and sweet. If it tastes like dust, it is dust.

Keep spices in airtight containers away from heat, light, and moisture. Never store near the stove. Buy whole spices and grind as needed for maximum freshness.
