Real vs Fake Saffron: How to Tell (2026)
Why Saffron Is Faked
Saffron costs $5-15 per gram, making it a prime target for fraud. Common fakes include dyed corn silk, safflower petals, and coconut threads.
Five Tests for Real Saffron
- Water test: Real saffron turns water golden yellow slowly (10-15 min). Fakes release color instantly or turn water red.
- Smell: Real saffron smells sweet, hay-like, slightly metallic. Fakes smell like nothing or like artificial perfume.
- Taste: Real saffron is bitter despite its sweet aroma. If it tastes sweet, it is fake.
- Shape: Real threads are trumpet-shaped (wider at one end). Fakes are uniform.
- Baking soda test: Mix with baking soda and water — real saffron turns yellow, fake turns pink/red.
What to Look For When Buying
Buy whole threads, never ground. Look for ISO 3632 grading (Category I is best). Iranian and Spanish saffron are most reliable.
