Shichimi Togarashi: Japan's Seven Spice
Shichimi Togarashi: Seven Flavors of Japan
Shichimi togarashi (七味唐辛子) literally means 'seven-flavor chili pepper.' This iconic Japanese spice blend sits on every ramen shop counter and soba restaurant table across Japan.
Traditional Seven Ingredients
- Red chili pepper (the heat base)
- Sansho pepper (Japanese prickly ash, numbing)
- Roasted orange peel (citrus brightness)
- Black sesame seeds (nutty richness)
- White sesame seeds (mild sweetness)
- Hemp seeds or poppy seeds (texture)
- Nori seaweed flakes (umami depth)
Regional Variations
Tokyo-style is mild and balanced. Kyoto blends feature more sansho for numbing. Kyushu versions add extra chili heat. Some modern blends include yuzu peel, shiso, or ginger.
How to Use
Sprinkle over ramen, udon, and soba noodles. Season yakitori (grilled chicken skewers). Add to rice bowls and onigiri. Mix into tempura dipping sauce. It's a finishing spice—add at the table, not during cooking.
