Jerk Spice: Jamaica's Fiery Heritage Blend
From Resistance to Icon
Jerk cooking originated with the Maroons — escaped enslaved Africans in Jamaica's Blue Mountains. They developed this method using indigenous spices.
Essential Ingredients
- Scotch bonnet peppers (100,000-350,000 SHU — fruity, tropical heat)
- Allspice/pimento (warm, clove-like — native to Jamaica)
Supporting Cast
Thyme, scallions, ginger, garlic, cinnamon, nutmeg, brown sugar, soy sauce, and lime juice round out the marinade.
The Pimento Wood Method
Traditional jerk is cooked over pimento wood, which infuses the meat with aromatic smoke. The meat sits on a grill made from pimento branches.
Modern Jerk
Today, jerk extends beyond chicken and pork to fish, tofu, and vegetables. For the most authentic result, marinate overnight and grill over charcoal with pimento wood chips.
