Jamaican Jerk Spice: Origins and Recipe
The Jerk Tradition
Jerk cooking originated with the Maroons of Jamaica, who developed this spice-heavy method to preserve and flavor wild boar in the Blue Mountains.
Key Ingredients
- Allspice (pimento) — the defining spice, native to Jamaica
- Scotch bonnet peppers — intense fruity heat
- Thyme — herbal freshness
- Ginger and garlic — pungent warmth
- Nutmeg and cinnamon — sweet depth
Traditional Method
Meat is marinated overnight in the wet jerk paste, then slow-smoked over pimento wood. The wood itself contributes essential flavor — substitutes cannot fully replicate it.
Home Jerk Rub (Dry)
Mix 2 tbsp allspice, 1 tbsp each black pepper, garlic powder, onion powder, 1 tsp each cayenne, nutmeg, cinnamon, thyme. Rub generously on chicken or pork 4+ hours before grilling.
