Ethiopian Berbere: The Soul of Wot Stews
Berbere: More Than Just Heat
Berbere is the foundational spice blend of Ethiopian cooking — a complex mix of chili, warm spices, and aromatic herbs that gives wot stews their signature deep red color and layered heat.
Core Ingredients
- Dried red chilies (bird's eye or cayenne)
- Fenugreek, cardamom, coriander
- Cloves, cinnamon, allspice
- Black pepper, nutmeg, ginger
- Rue (a bitter Ethiopian herb)
Traditional Preparation
Each spice is individually toasted, then sun-dried and ground. The blend is aged for several days to let the flavors meld.
Signature Dishes
Doro wot (chicken stew), misir wot (red lentils), and kitfo (minced beef) all rely on berbere as their primary seasoning.
