Berbere: The Soul of Ethiopian Cooking
Berbere: Ethiopia's Signature Spice
Berbere is the backbone of Ethiopian cuisine—a complex, fiery blend that flavors everything from doro wat (chicken stew) to misir wat (red lentils). Each family has their own recipe, passed down through generations.
Core Ingredients
- Dried red chilies (the base, 40-50%)
- Fenugreek
- Coriander
- Cardamom
- Cloves
- Cinnamon
- Allspice
- Ginger
- Turmeric
- Black pepper
- Nutmeg
- Rue (traditional, hard to find outside Ethiopia)
Traditional Preparation
Chilies are sun-dried, then all spices are individually toasted and hand-ground with a mortar and pestle. The process takes hours and fills the home with incredible aroma. Modern cooks use spice grinders but the toasting step remains essential.
Using Berbere
Bloom in oil or niter kibbeh (Ethiopian spiced butter) before adding liquids. Start with 1-2 tablespoons per pound of meat or cup of lentils. It builds flavor over long cooking times—add early and simmer.
