Spice Rub for Lamb Chops: 5-Minute Marinade
Why Spice Rubs Work for Lamb
Lamb has a rich, distinctive flavor that stands up beautifully to bold spice rubs. The fat content carries and distributes spice flavors throughout the meat.
The Perfect Lamb Rub
- 2 tsp ground cumin
- 1 tsp smoked paprika
- 1 tsp ground coriander
- 1/2 tsp cinnamon
- 1/2 tsp cayenne pepper
- 1 tsp kosher salt
- 1/2 tsp black pepper
Method
- Pat lamb chops dry with paper towels
- Rub spice mix generously on both sides
- Drizzle with olive oil and massage in
- Rest at room temperature for 20-30 minutes
- Grill or pan-sear over high heat: 3-4 minutes per side for medium-rare
Variations
Add 1 tsp dried rosemary for a Mediterranean twist, or substitute sumac for the paprika for a Middle Eastern flavor profile. Mint chimichurri makes an excellent finishing sauce.
Serving Suggestions
Pair with roasted potatoes, couscous with dried apricots, or a simple yogurt-cucumber raita to balance the spices.
