Adobo sauce is the backbone of Mexican cooking — a deeply flavored, smoky-sweet chili paste that transforms everything from tacos al pastor to braised meats. Making it from scratch using dried chilies takes 20 minutes and produces something no store-bought jar can match.
## The Holy Trinity of Dried Chilies
Authentic adobo relies on three dried chili varieties:
- **Ancho** (dried poblano): Sweet, raisiny, mild heat (1,000-2,000 SHU)
- **Guajillo**: Tangy, slightly fruity, medium heat (2,500-5,000 SHU)
- **Pasilla** (dried chilaca): Earthy, slightly bitter, medium heat (1,000-2,500 SHU)
## Complete Recipe
### Ingredients
- 4 dried ancho chilies, stemmed and deseeded
- 4 dried guajillo chilies, stemmed and deseeded
- 2 dried pasilla chilies, stemmed and deseeded
- 4 cloves garlic, unpeeled
- 1/2 white onion, quartered
- 3 whole cloves
- 5 black peppercorns
- 1 teaspoon cumin seeds
- 1 teaspoon dried oregano (Mexican preferred)
- 1/2 teaspoon ground cinnamon
- 3 tablespoons apple cider vinegar
- 1 tablespoon piloncillo (or brown sugar)
- Salt to taste
### Method
1. **Toast chilies**: Dry skillet, medium heat, 30 seconds per side until pliable and fragrant. Don't let them blacken.
2. **Rehydrate**: Submerge toasted chilies in hot water for 15 minutes until soft.
3. **Char aromatics**: In the same dry skillet, char garlic, onion until blackened in spots.
4. **Toast spices**: Dry-toast cloves, peppercorns, cumin until fragrant (45 seconds).
5. **Blend**: Combine chilies (reserve soaking liquid), garlic, onion, spices, oregano, cinnamon, vinegar, and piloncillo. Blend until smooth, adding soaking liquid as needed.
6. **Strain and season**: Pass through a fine mesh strainer. Season with salt.
