Coriander Lime Shrimp: Quick Dinner
Why Coriander and Lime Work Together
Coriander seeds have a warm, citrusy flavor that perfectly complements the bright acidity of fresh lime. Together they create a marinade that is both aromatic and zesty, ideal for delicate proteins like shrimp.
Ingredients
- 1 lb large shrimp, peeled and deveined
- 2 tsp ground coriander
- Zest and juice of 2 limes
- 3 cloves garlic, minced
- 1/4 cup fresh cilantro, chopped
- 2 tbsp olive oil
- Salt and red pepper flakes
Marinating Time
Mix all marinade ingredients in a bowl. Add shrimp and toss to coat. Marinate for 15-20 minutes in the refrigerator. Do not exceed 30 minutes, as the lime juice will start to cook the shrimp.
Cooking Methods
For grilling: thread shrimp onto skewers and grill 2-3 minutes per side. For stovetop: heat a large skillet over high heat and cook shrimp 2 minutes per side until pink and opaque.
Serving Suggestions
Serve over rice, in warm tortillas, or on a bed of mixed greens. Garnish with extra cilantro and lime wedges. This shrimp also makes excellent taco filling with avocado and pickled onions.
