Korean Gochugaru: Chili Flake Guide

What Is Gochugaru?

Gochugaru (고추가루) are Korean chili flakes made from sun-dried red peppers. They're a staple in Korean cooking — the base for kimchi, gochujang, and countless banchan (side dishes).

Types

Heat Level

Korean chili flakes are moderate heat (4,000-10,000 SHU) — less than cayenne (30,000-50,000 SHU) but more than paprika. They're prized more for flavor and color than heat.

Storage

Store in the freezer or fridge — gochugaru oxidizes and turns brown at room temperature. A sealed bag in the freezer keeps it bright red and fresh for up to a year.

Substitutes

No perfect substitute. Aleppo pepper is closest in heat and fruitiness. Crushed red pepper flakes are too hot and lack the sweetness.
