Indian Tadka: The Art of Tempering
What Is Tadka?
Tadka (also called chhonk, baghaar, or tempering) is the technique of frying whole spices in hot oil or ghee to release their flavors. It's typically poured over finished dishes as a flavor-enhancing finishing touch.
The Order Matters
- Heat oil or ghee until it shimmers (not smoking)
- Add mustard seeds first — wait for them to pop
- Add cumin seeds — they sizzle for 10-15 seconds
- Add asafoetida (hing) — a tiny pinch
- Add dried red chiles and curry leaves
- Add garlic or ginger last (they burn fastest)
Common Mistakes
- Oil not hot enough: spices absorb oil instead of blooming
- Adding everything at once: smaller seeds burn before larger ones release flavor
- Using too much heat: spices char and turn bitter
Two Tadka Technique
For dal: one tadka at the beginning (while cooking) and one at the end (poured on top). This creates layers of flavor.
