Cooking with Lavender: Dos and Donts
The Soap Problem
Lavender contains linalool, found in many soaps. Too much in food triggers a soapy association. Restraint is key.
Start Small
Use ½ to 1 tsp dried culinary lavender for 4-6 servings. Grind with sugar to distribute evenly.
Sweet Applications
- Shortbread cookies
- Lemonade and cocktails
- Crème brûlée
- Infused honey
Savory Applications
- Herbes de Provence rubs for lamb
- Roasted chicken under the skin
- Grilled vegetables
Pairing Partners
Lavender loves lemon, honey, blueberries, chocolate, and lamb. It clashes with vinegar and tomato dishes.
What Not to Do
Never use essential oil or craft-store lavender in cooking.
