Mexican Mole: World's Most Complex Sauce
What Makes Mole Special?
Mole is not a single recipe — it is a family of sauces, each with 20-30+ ingredients. Mole poblano alone includes mulato, ancho, and pasilla chilies, chocolate, cinnamon, cloves, anise, sesame seeds, almonds, plantains, and more.
Seven Classic Moles of Oaxaca
- Negro: Dark, bittersweet with chilhuacle chili
- Rojo: Rich and spicy with chocolate
- Coloradito: Reddish, sweet-savory
- Amarillo: Yellow, no chocolate
- Verde: Green, herb-forward
- Chichilo: Smoky, beef stock base
- Manchamanteles: Fruity with pineapple
Preparation
Traditional mole takes 2-3 days: toast chilies, soak, grind, fry in lard, simmer for hours. Modern shortcuts use store-bought paste, but the depth is incomparable when made from scratch.
