Saffron Substitutes That Actually Work

By Maya Gonzalez ·

Why Saffron Is So Expensive

Saffron costs $5-15 per gram because each crocus flower produces only three stigmas, hand-harvested at dawn. It takes 75,000 flowers to produce one pound.

For Color: Turmeric

Turmeric provides brilliant golden-yellow color at a fraction of the cost. Use 1/4 tsp turmeric for every pinch of saffron.

For Color + Mild Flavor: Safflower

Safflower petals give a similar golden hue with a milder, slightly grassy flavor. Use 2-3x the amount of saffron called for.

For Flavor: Annatto

Annatto seeds provide warm, peppery-sweet flavor and orange-yellow color. Steep in hot oil or water before adding to dishes.

For Aroma: Marigold Petals

Dried marigold petals offer a mild, slightly bitter floral quality. Used in Georgian cuisine, they work well in rice dishes and stews.

When Nothing Substitutes

For dishes where saffron IS the star — like risotto Milanese or traditional paella — buy a small amount of high-quality Spanish or Iranian saffron.
