Indian Tempering (Tadka): Step-by-Step Guide
What Is Tadka?
Tadka (also called chaunk, baghaar, or phoron) is the process of briefly frying whole spices in hot fat to release their essential oils. It is added to dishes either at the start or as a finishing garnish.
Classic Dal Tadka
- Heat 2 tbsp ghee until shimmering
- Add 1 tsp cumin seeds — wait for sizzle (15 seconds)
- Add 1/2 tsp mustard seeds — wait for popping (10 seconds)
- Add 1 dried red chili, broken
- Add 8-10 curry leaves
- Add pinch of asafoetida (hing)
- Pour immediately over cooked dal
Regional Variations
South Indian tadka adds urad dal and mustard seeds. Bengali phoron uses panch phoron (five-spice mix). Punjabi tadka features garlic and ginger.
Key Rule
Have your cooked dish ready before starting tadka. Once spices are bloomed, you must act fast — they burn within seconds.
