Homemade Garam Masala: Authentic Recipe
What Makes Garam Masala Special
Garam masala translates to "warm spice blend" and is the finishing touch in countless Indian dishes. Unlike curry powder, it is added at the end of cooking to preserve its volatile aromatic compounds.
Traditional Ingredients
- 2 tbsp coriander seeds
- 1 tbsp cumin seeds
- 6 green cardamom pods
- 4 cloves
- 1 inch cinnamon stick
- 1 bay leaf
- 1 tsp black peppercorns
- 1/2 tsp fennel seeds
- 2 dried red chilies (optional)
- 1 blade mace (optional)
Method
Toast all whole spices in a dry skillet over medium-low heat for 2-3 minutes until fragrant. Watch carefully to avoid burning. Let cool completely, then grind to a fine powder using a spice grinder or mortar and pestle. Store in an airtight container for up to 3 months.
Regional Variations
Kashmiri garam masala includes more cardamom and fennel. Punjabi versions emphasize black pepper and cloves. Bengali panch phoron is a related but distinct five-spice blend. Adjust ratios to your preference.
How to Use It
Stir 1-2 teaspoons into curries, dals, and rice dishes just before serving. It also works as a finishing sprinkle on roasted vegetables, yogurt raita, and even popcorn for a savory snack.
